My name is Nickolas Elsberg I come with over 10 years of Food and Beverage experience. In 2022 I am proud to say that I make my way back to Loyola as a Food Service Director. I am excited to be back with the team! I cant wait to share what I have learned over the years and I am most excited to be back at such a great school with a wonderful program!

He has been with Aramark for 6 years; his journey started in Denver, Colorado working in Sports and Entertainment at Coors Field (Colorado Rockies) and Pepsi Center (Avalanche, Nuggets), beginning as a field-level Supervisor and working up to Warehouse Manager. In 2019, Brian was allowed to change departments, moved to Higher Education as Lead Retail Supervisor for F.I.T (Fashion Institute of Technology), moved on to Manhattan College in 2020, and became Food Service Manager at St. Peter's University in 2021.
When he is not working on assisting his employees or the job at hand, Brian is an avid Sports fan and Music Concert Attendee.
I'm from Chicago, born and raised. I began working in the food industry while going to school and eventually lead me into the career path I am on today. I've worked with Aramark for over 8 years, started in Business Dining sector and wanted to take on the challenge of coming to Higher Education when I came to Loyola in 2019.
I was born and raised in the Southeast side of Chicago, and yes, that’s what the area is called. I am Mexican American, who loves Mexican food but open to other foods. I started here about 10 years ago as a catering attendant, from there I developed a love for Culinary.
Azra has been with Loyola Dining since 2009. She loves to spend her summer traveling to her home country of Bosnia.
My name is Kimberly Baker, I have over 20 years of management experience in food service and customer service industry. I have 4 children ranging from 4 to 23yeara of age. In my spare time I enjoy reading the Bible, attending church services, hanging with family and friends, and skating.
Hello! My name is Walter King. I am the food service manager for Water Tower dining experiences. Most recently I was a part of Nike Food Services at WHQ in Beaverton, Oregon. I am an avid outdoorsman and spend my weekends hiking, skiing or fishing with my wife and our dogs. My favorite food right now is massaman curry with lamb over rice. I look forward to creating memorable dining experiences with you!
