Meet the On-Campus Dietitian: Terese Sinal MS, RD, LD

Terese completed her dietetic internship and master’s degree at Loyola University. She has experience working in community nutrition, food service, and food insecurity. Terese started her career working for summer camps in menu development and managing dietary restrictions. In her current role, she supports the culinary team to ensure the menus accommodate all diets. Additionally, Terese hosts events that promote overall health and wellness and provides free nutrition consultations to students regarding food allergies, eating a vegan/vegetarian diet, or living a healthy lifestyle while in college. Terese is passionate about advocating for everyone to have equal access to foods that fit their lifestyle and nutritional accommodations.

Fare Check

Loyola University has partnered with FARE to provide an additional form of allergen training to their staff. FARE (Food Allergy Research & Education) is a non-profit organization with the initiative to build environments safe for individuals with food allergies. The FARE Check trainer provides Loyola dining additional guidelines to ensure the dining halls are continuing to follow safety protocols in their operation regarding food allergies.

Special Dietary Needs

If you have food allergies or special dietary requirements, our goal is to provide you with the tools and support you need.

Our teams will work with you to enable you to dine with us safely and to be active in the management of your food allergy or food-related medical condition.

We take into account your personal dietary needs and will make every effort to help you find food that fits your life.

True Balance

True Balance

Our True Balance station, located in Simpson offers food that is made without the top 9 food allergens (milk, eggs, peanuts, tree nuts, fish, shellfish, soy, sesame, and wheat). The recipes and ingredients have been reviewed by the chefs and registered dietitians to ensure that we are serving a safe and quality product. The meals served at the True Balance station are prepared in a separate area of the kitchen to prevent cross-contact. Our goal is to accommodate all students with intolerances and allergies and ensure their dietary needs are met. All managers, chefs, and the registered dietitian are trained through Allertrain© in the proper food safety measures in the handling of allergen foods.

*We rely on our vendors’ allergy warnings and ingredient listings. Because we operate a commercial kitchen where cross-contact with allergens is possible, we cannot guarantee that any food item will be completely free of allergens.


Gluten-friendly options

We are not a certified gluten-free facility, but we offer gluten-friendly options throughout our dining hall. Gluten-free bread and gluten-free pizza crust are available upon request in all dining halls. Look for the GF label next to menu items that signify gluten-friendly options or ask the staff for GF alternatives available.

Vegan & Vegetarian

We strive to offer various plant-forward options across campus. We have a dedicated Vegan station available in Damen, as well as all our dining centers offering various vegetarian and vegan options. These can be found signified by V - vegetarian or VGN – vegan. We also have various plant-based proteins available on our salad bars.
